Best honing steel (I know, I know)

Probably it’s just snapping off the bent bits, which already is an improvement over a rolled / bent edge on a non serrated blade.

    Sugimoto gyuto

    Mazaki Kasumi (JNS) Owners...refinishing? refinement?

First I’d ease the choil with some sandpaper or file. Then use 180~300 grit sand paper to make knife scratches all longitudinal, then polish with sandpaper up to 600~1000 grit and some carbide powder paste. Then sharpen flat on 800~1500 synthetics and then Ohira Tomae. After that I’d use...

    Cost of custom handle?

+1 for Dr.Ken. Great value and work. Cody Paul is also great but a tad more expensive. Alton Janelle IV too but his current wait list (hence prices too) are a bit of a let down...

Best honing steel (I know, I know)

+1 for Dick Micro. I don’t RECOMMEND honing rods for very hard blades above 61HRC, not even a ceramic or a “glass” rod. For this type of knife I’d say: strop with leather / newspaper until you need to do a few passes on a stone to refresh the edge and just maintain such a cycle. That said, the...

    Reliable edc

If you want something cheap using X Cro Mov steel but really rugged and small, I’d recommend a VictorInox small folding blade.

    Sugimoto gyuto

Isn’t Sugimoto the one famous for their Chinese Cleavers? Do they make traditionally Japanese hand forged blades or they go for a more industrial production method?

the term "stain free high carbon steel" and kitchen knives often lack proper descriptions

Oh, I forgot: and ridiculous about of fat fat free Chromium and Chromium carabides (which are basically the worst carabides you want on an actual cutting tool).

the term "stain free high carbon steel" and kitchen knives often lack proper descriptions

Generally it’s cheap X Cro Mov steel with 0,3~0,6 Carbon, about 52~57HRC, very springy and malleable blades thick behind the edge, laser cut and badly finished.
