Got the 240 of that. BIG flat spot (which was what I was after). The height is great (if you like that too). White steel easy to sharpen.

Corrosion Testing of 9 Stainless Knife Steels

At risk of being shot down for being off topic, this reminds me that there are two kinds of people: those who can extrapolate from incomplete data ... Anyway, always an education to read Larrin's posts. Thank you, Larrin!

    Nakiri versus bunka for veggies

I just picked up one of these from BST, becaus e I wanted to "try a nakiri or small cleaver". I love it, the height of this adds to its utility (for me). I may be on the slippery slope to selling everything and just having one CCK for everything (JUST KIDDING). Unfortunately it's oos at KnS...

What (or rather, where) is the point of a nakiri?

(off topic: not sure what you call "tallish", but Yoshimune are under US$200, & have big flat spots: my 240 is 51mm at heel, KnS say they range 52-53 for 240 & 210, http://www.knivesandstones.com/yoshimune-sanjo-gyuto-240mm-white-2/ )

Advice on first "Real" Knife as a 50th Birthday treat to myself?

Just be careful, breaking down poultry and breaking bones is def NOT a recommended activity for most gyuto ... use your current knives for that kind of rough and tumble?

    210mm or 240mm Gyuto/K-Tip Gyuto/Bunka with a nice, long flat spot?

Yoshimmune. Big flat spot. 240 is about US$ 180 210 is US$150 http://www.knivesandstones.com/yoshimune-sanjo-gyuto-240mm-white-2/ The 240 with the standard handle is quite blade forward balance. Don't know what the 210 is like.

or soft hinoki board (japanese cypress), or any one of many soft boards around (eg synthetic rubber): there's a number of threads here on what boards people use. Many DON'T use end grain for a variety of reasons.
