I have one of these, not from JNS but a different vendor, exact same kanji though. Nice steel, nice grind on these. GLWS!

lets have a new razor thread.

For someone thinking about a foray into razors, any advice on where to start? Glancing at old/NOS kamisoris on ebay, but don't really know what I'm looking for (or trying to avoid, other than obvious junk). For sharpening/using it seems there's plenty of available guidance, but would love any...

Been a while since we had a Cleaver chat.

Anyone ever try the all-purpose cleaver from the wok shop? See people talk about the veggie/slicer one a good amount but not this one https://www.wokshop.com/newstore/product/carbon-steel-cleaver/

Been a while since we had a Cleaver chat.

Those are intriguing! Would be interested to see how they compare to suien as an entry-level japanese-made cleaver. Bit cheaper, flatter profile, and a bit heftier (my 220x108mm suien is 420 grams even). If anyone is tempted enough to try it out, let us know!

Have you tried one of these? Don't see a lot of info on them on the forums, other than that they seem to be made with yellow 2 and are quite hard

My favorite color is BLUE!.............A patina thread.

Enjoying the developing patina on the Suien VC Cleaver I picked up from @Carlo a couple months back (post-polish attempt - as an aside, man is it work trying to polish a decently hard monosteel cleaver. Also my first real polishing attempt so maybe I am just weak of spirit 😅. WIP but no plans to...

    Show your newest knife buy

Dang, great find. You mind if I ask how much you found it for? Just curious. Also, what's the weight? And nice thinning job - if more than that came off the midsection, that's a good amount of work!

    Anyone have Heiji Suji 300mm?

Haven't had the suji but got a SS nakiri as a gift for a family member. Pre-patina it seems to rust pretty fast, we had one rust spot that seemed to form in under a minute. I sort of forced a patina (just cut a bunch of stuff - apples, onions, meat making sure to make contact with all of the...

    Knife findings

Have you (or anyone else reading) tried his knives, and if so any thoughts on the heat treats and grinds? Searched a bit on the forum, from some BST posts seems like generally positive reviews, thick spine out the handle with dramatic distal taper but not finding a ton of details
