Buying and transporting a knife out of France by plane.

On the other hand 3 yrs ago TSA seized (and destroyed) from packed luggage a Japanese hori-hori (a narrow-bladed trowel). Yes, it did resemble a knife in the X-ray, but once removed from the suitcase it should have been recognized as a trowel. And it was in stowed luggage. No explanation, no...

Maybe start by checking with your airline? You can't possibly be the first one . .

Brownies are dog biscuits for kids. Can't be that much of a problem. By my count you've already got rid of one of them. Not asking how.

    Mister Strop

You can strop on anything. Coarse linen, old blue jeans. In "Lives of a Bengal Lancer" (1935) Gary Cooper strops his double-edge razor on the palm of his hand. I use and old leather belt, 48", loaded w/mink oil and held fairly slack. And prior to that I simply use my Zwilling 14" steel, now some...

Whats cooking? **** Making something fine and fancy?** Just plain good? Show us!

Here's a fusion recipe well-like by my family. Sorry, no photos. Nonno’s Italo-Pakistani Spicy Pasta Ingredients 2-3 Tbsp olive oil 1 tsp spicy Italian seasoning (this I bought/buy in Italy. Replicate it [hopefully] by adding some red pepper flakes to standard supermarket Italian Seasoning) 1 lb...

Been a while since we had a Cleaver chat.

35 yrs ago I met an old guy hauling butcher blocks out of Esposito's famous butcher shop on 9th Ave NYC. He was a freelance professional "block leveler" who served several shops--don't know how many. He lined up the blocks, fixed a light leveling framework to their sides, and proceeded w\a...

My favorite color is BLUE!.............A patina thread.

Some of these are pretty handsome, but frankly taking a natural process such as patination and turning it into an obsession via week-long bouts of lime-slicing seem a tad freaky to me. Do you imagine any professional chefs do this sort of thing?

    A Question About Peanut Butter

Butter on almost all sandwiches is a must. Can be skipped if another condiment is slathered on, such as mustard before piling on the pastrami, or mayo as a foundation for a Club sandwich or BLT.

What are we listening to lately?

Mostly classical. My favorite to pump up my heart rate is Camille Saint-Saëns' "Organ Symphony." Impossible to play it too loud--outdoors. (Indoors, structural damage may ensue.)

Whats cooking? **** Making something fine and fancy?** Just plain good? Show us!

Sometime it’s inspiration plus desperation: It was 6 AM and I was starving (always am, first thing in the morning). Attacked the icebox and found an egg, a couple of flour tortillas and a 6” x 1” strip of 3-day old chapli kebab. Put griddle on low heat, warmed kebab and tortilla thereon, then...

I'm a frequent pedestrian. I walk for pleasure and also to shop, see doctors, pick up stuff at the cleaners--all the sort of stuff many people pay delivery service for. And I'm walking every day, often for two miles or more. I find cars much easier to deal with. Traffic keeps their speed down...

Zwilling Pro: Y You Do Dis?

Such a lot of pretentious sneering going on here. Fact is, Thun's soft half bolster is comfortable for long-term use. So far, only Misen has copied it (and claims it's unique!). My Pro 8" is 10 yrs old. Wide blade (2-1\4" at the heel) is great for sweeping food from board to pot. Frequent...
