    my favorite is Heiji's semi-stainless. sharpens and cuts like really good carbon, but resists staining very well. i guess it's D2, but it doesn't feel like any other D2 on the planet, and i've sharpened and used plenty of D2 (it's also not like A2, in that it doesn't patina quickly like the A2 knives i've used have, though it's closer to A2 in sharpening and cutting than typical D2). all well done carbon is in the same area for me, and i like ZDP-186, SG-2 and SRS-15, but the Heiji semi-stainless is the best of both.

    Am I the only one that wants to see what each knife is in that block? Sorry that I don't know already.
