I know you are not supposed to use olive oil (or natural oils) on cutting boards, but what if someone has used olive oil on their board? What should they do? Just leave it, and from that point start using mineral oil?

Or can something be added to prevent the olive oil in the board from going rancid?

Wash thoroughly, coat with salt overnight to draw out the residual oils, wipe off the salt and recoat with mineral oil. This should prevent any of the olive oil from turning rancid.
