Just wanted to check in before chiming in elsewhere. Already been lurking and sifting through the wealth of knowledge that's already been amassed and I'm already reeling! I'm relatively new to high end kitchen cutlery and finding this new facet to the knife addiction has taught me how little I actually knew in the first place
