This question is for knife sharpeners with experience. With regards to reshaping tips of knives that got that funky hook shape from sharpening the tip straight up and down on the stones. What is the most efficient way to re profile this common problem free hand on sharpening stones with good results. Just curious if I'm missing any other methods out there.

I grind the tip back to the shape I want slowly and gradually on the granite slap outside on the back patio of the restaurant. Then put it on the stones, reset the bevels and edge and I'm good to go.
