I'm thinking of getting a honesuki, and looking at a few different options:

  • the Hattori FH that's on sale now in BST - looks nice and gets good reviews, but I'm not a fan of VG-10 (at least as seen in my Tojiro DP). I'm also unsure whether the curved profile is better or worse than the common flat honesuki profile.
  • Carbonext: seems like a good value, the steel is well-liked.
  • Artifex in AEB-L: seems like a good value as well, and I like AEB-L.

Thoughts? Other good options? I'd also be fine with wa handles, but they seem to be less common for honesuki.

all choices are great.

if i was right handed, that hattori FH would seem to be a good fit for me.

If you're not sure if you'll keep it, I'd go for the CarboNext. It's a good quality, a good value, and the $7 worldwide shipping is an exceptional deal. If you know you're going to use a honesuki and keep it for the long haul, I'd buy the Hattori.

Any comments about the curved profile of the Hattori FH?

I find a curve aids in most butchery tasks.

Just saw that there's a honesuki in the Misuno Swedish Carbon line. Has anyone tried it?

New option: Suisin western carbon, about the same price as Carbonext. Let me know if you've tried it?
