Can folks post a bit about kurouchi finish. what is the metallurgic definition? Can this fiinish be removed to create a more traditional finish. These knives seem much less expensive. I own a Kurouchi shig and two non-Kurouchi shigs. they seem very similar in performance and the kourouchi is so much easier to are for. I would appreciate any knowledge.
