Up for sale is my Hattori FH gyuto. Purchased new from Koki last October, measurements and specifics can be found here:

Knife is in excellent shape with typical light scratches behind the edge from sharpening that will polish out very easily. I lowered the OOTB edge VERY slightly, but the geometry is unchanged, and Ill leave it as is for the new owner to do what they wish. Also some very light scratches on the spine and choil from very fine sandpaper I used to ease the edges a bit. They are NOT rounded, I merely broke the edges to relieve the initial sharpness.

Fit and finish of the micarta handle is damn near perfect. Whatever vodoo magic Hattori uses on this VG-10 makes it very smooth feeling on the stones and it takes a very nice edge. I'm making the move to semi-stainless and carbon.and have bought 4 knives in the last 2 weeks. If money were no object, I'd keep this one around just because it looks so good, but unfortunately I need to replenish the Paypal account.

I just dusted off my fh 240 and took some sandpaper to the spine, rounding it off nicely. polished it and gave the edge a kiss to the stones. It just made the knife feel like a whole new "laser-esque" work horse. I used it for everything at work for the rest of the week: portion shorties, mince shallots, herbs, chiffonade sorrel, clean fish, Everything.
I forgot how great this knife is. You're right about the voodoo magic.

Thanks Marc. It is a great knife and I know I'll regret it later, but sometimes you gotta bite the bullet and let a good one go.
 
I was thinking of selling mine aswell. Realised its a great cutter from heel to tip. Being my first gyuto, ill keep it forever. Good knife.
 
I'll also consider trades (+\- $ depending on the knife) for a 270 carbon, carbon clad, or semi-stainless suji.

And I'll throw in a pair of unused plating tweezers from JB Prince. (Small, curved tip, stainless ones)

My opinion? Good call. Doesn't help raise money though. Things will have to be pretty bad for me to sell mine...
 
hehehe your Hattori is going to get a complex if you keep doing that to her.
