this is a great resource. you guys are knife fanatics..i love it.
me? i'm a home cook. my wife cannot cook..at all. she once made stew that was purple/gray. tough as shoe leather. it was "cute".
knives? yea. i like them sharp, and consider them tools. not a collector. knives i buy and don't like..i just give them to friends. i like vintage knives. i found this place shopping for Sabatiers, and when i was given a vintage Gustav Emil. thanks for the info. i just dipped a toe into pool called "Japanese water stone"..i am getting mildly proficient at the task. is it weird that i find it therapeutic sharpening tools? i love that abrasive, dragging sound.
i will buy a Gyoto soon.
