    NYTimes article on the link between red meat and heart disease

    Apparently it's not all about cholesterol.

    For those who have read McGee's On Food and Cooking, you'll recognize the compound TMAO as one of the compounds found in a lot of seafood and the one that is converted to the old seafood smell chemical, trimethylamine (TMA).
