Actually, it has been a while since I last posted, and in the meantime I have also received a great, very rustic, hand-forged Vietnamese-style cleaver from Vinh Lê Cao, the same knife-maker about whom I posted before.

He starts with something like this:

Then hammers it into this:

And eventually ends up with this, after a good selective temper:

Mine is the second from the right - I thought that 1.1kg was enough! The farthest one on the right weighs almost 2.5kg!!

Trust me, they will cleave right through rocks...

Obviously, my new tool of choice for dealing with bones! :biggrin:

Well spotted, guys! It is indeed a set of matched Raders. More to come about those.

As to the cleavers, Vinh does take custom orders, and has very reasonable delays and prices. His contact information is on his blog. I believe he speaks English, but let me know if anything gets lost in translation, and I will try to help as I can...
