Congrats! It was my foray into J-knives and I'm still using it as my main work knife today, albeit after some major thinning work courtesy of a certain Mr. Martell.
Just a quick follow up; I used the AS last night and WOW. Just so you guys know, I'm not too experienced with cooking or kitchen knives and ALL of the practice that I have had up until yesterday was with an inexpensive set of Spanish made Henckels knives, and the Hiro WAY outperforms those other knives in all respects. It's WAY sharper, WAY more comfortable to use, stays much sharper, and is drop dead sexy!! I love it, and I can see myself buying more!
I can't wait until I have it thinned so I can see the difference in performance!!
