Up for sale is a beautiful custom Bill Burke gyuto. Hand forged 52100 carbon steel with a low temp triple quench and triple temper for high performance edge retention, stainless steel bolster, measures 10 inches or 253 mm on the edge. It is polished to a mirror finish and has never been used, brand new. The handle is made from presentation grade rosewood burl and feels fantastic in the hand. Bill has over a year wait for his customs so this is a great opportunity to own one now. Please let me know if you have any questions. Asking $1800 shipped conus, pp fees included.
