So I am sure that this post has been here 1000 times but I can't find one for my specific needs. I just got promoted and would like to treat myself to a new knife. I have around 350 to spend and I am all over the boards on my search. I currently own a shun kaji chef knife and it is pretty much all I use except for my 3 dollar kiwi Thai chef knife and my 10 dollar ceramic pairing knife. I also use my Dexter boning knife for the meat. I work 14-16 hours a day in the kitchen with maybe 8 of the hours using the knife. I want something that will last me some years. I currently do have a very good guy who sharpens my knives and my head chefs knife. He is more that capable of doing any style of knife and I would trust him with any knife that I would by no matter how much it cost, or how delicate it is. Thank you for any feedback.
