How's it going? Name is Erik and I just joined the forum today. I am a working cook in cincinnati ohio. My knife knowledge is minimal, but I'm hoping to learn quite a bit here.
 
I think I have learned more in the short time I have been on this forum, than almost forty years in the professional kitchen. Good luck & welcome.
