i just pulled the trigger on claytons kato 240mm gyuto workhorse in this thread
http://www.kitchenknifeforums.com/showthread.php/13432-FS-Shigs-and-Kato
unfortunately i prefer 270mm gyutos, i really have no idea why i keep trying to adjust to 240s but i need to let this knife go. im looking for a trade for a wa 270 gyuto with similar value. i can compensate if something is higher in value and its something im interested in. honestly, i would love a kato 270 but im not holding my breath on that one. asking $450 or trade. this knife was lightly sharpened once, 247mm heel to tip and over 52mm tall. clayton purchased within the last month so its still very very good condition.

gengetsu, heiji, watanabe, mizuno even whatever 270 that is in same price ball park....i got a good offer but i would like to hear some more....

I'd send you a 270 Heiji that is down to about 51 at the heel, but I'd want to try the Kato first, as my 270 Heiji is my main roast slicer... I'd also want to work on my 270 Heiji first, as I don't have it cutting as well as my well-used 240...

Still available....I have a potential offer that might work out however...nobody has a watanabe 270mm they wanna give up?
