    Ichimonji kiritsuki

    Up next is a custom Ichimonji kiritsuki refinished and sharpened by Dave Martell a while back. It is white steel #2 and has a scary edge. I got it from Dave's web site, where it was listed at $650. I really like this as a vegetable knife or sashimi knife. However, the herd must be trimmed.

    Oh, of course. It is a 270mm; it actually measures 260mm of cutting edge and 275mm handle to tip..

    I think at least one forum member has owned this knife before. Perhaps we can get another opinion from him or them.

    For what it's worth, this was Jim's knife a couple of years ago. It's a beauty.
