Just want to say hello. I've lurked here for a while and have since made a couple of posts but I never introduced myself. I'm a home cook from LA.
Sharpened my Wusthofs freehand for many years on a Norton IB8, did just an OK job. Never knew about japanese knives. Bought my wife a Shun santoku at SLT a couple of years back because the weight felt right to her. Wasn't satisfied with my sharpening results (boy was that Norton loaded up) and discovered the jknife world.
First upgraded to waterstones. Got my sharpening technique down and now I'm adding to my knife collection.
