Well, this seems like as good a thread as any to quite my lurkin and start chiming in.
I try to fit in as much hunting as possible every year and have gotten to the point where I am pretty satisfied with my setup.
In Canada, especially in the prairies where I typically hunt, things can get pretty cold pretty quick during the hunting season, so we have learned that skinning sooner is always better and much easier than later. Most of the time, the work is done in the field within minutes of downing (coyotes also appreciate that). I also exclusively walk and stalk, and I do not carry a backpack. So, supplies need to be minimal and fit into a cargo or vest pocket.
I carry one knife, with a thick enough blade to pop joints and a round enough point to make skinning easy. This year my knife of choice will be a Bohler M390 version of these Survive knives.
Mine has a one of these orange G10 handles, because, well because it sucks when your knife is camo and you put it down somewhere while skinning.
Then, the only other item that I have found I need, and only because of the sternum and hip, is one of these fine tooth, folding, saws.
