    Sharpening progression

    I currently own 2 JNS stones one coarse or coarser at around 800-2k and the finishing around 8-10k

    I was wondering if anyone has any suggestions what I should put between these two for now

    Since it is a pretty big jump from the 8-2k to 8-10k

    Something in the JNS category as well

    you could throw in a 4k, but I really don't see a reason.

    Depends on if you can remove the scratches without too much effort/time on the higher grit stone. Curious what stone you are referring to that is 800 to 2k finish. If really 2k finish then likely no problem going to 8k, but unless you are using single bevel knives I think 8k may be a bit too refined (gyuto to me should finish somewhere between 4-6k for most needs).
    once in a while you get shown the light, in the strangest of places if you look at it right
