    F/S Hiromoto HC 21 cm gyuto

    No longer in production, this is a high carbon mono steel blade.

    Purchased from another forum member some time ago, it has been sitting, unused, for several months.

    A good introduction to a carbon steel knife.

    $65 includes insured shipping in CONUS and PayPal fees.

    I honestly don't know. It was there when I got it. Whatever it is, it does a very good job of minimizing reactivity.

    Just curious, I use phosphoric acid to force a patina on my Fujiwara carbon and get similar results.
