Looking to move along this like new Itinomonn 240 western gyuto. I purchase it a few weeks ago from Maxim at JNS ( http://www.japanesenaturalstones.com/western-itinomonn-kasumi-240mm-gyuto/ ) and used very sparingly. It's been sharpened twice on 1 & 5k synthetic stones with no alteration to the original geometry. Theres is 1 very light scratch on the face of the blade that you cant really see except under certain light at certain angles, but the buyer should know what to expect. Other than that (which would polish out in a minute w/ some wet/dry) it really is just as it came out of the box. The grind on this knife is quite good, with a great balance of convexity and thinness behind the edge. Flies through potatoes and onions with a breeze, and has a nicely rounded spine and eased choil. This example has a Cocobolo handle that is perfectly finished and contoured to give a great feel in the hand and set up for a nice pinch grip. A very well made knife that performs as good as it looks, but just not quite the "perfect" one for me.
