I just started a new job and it looks like im in need something for slicing cooked proteins on the line during service. primarily steaks and duck breasts. im guessing a ginga would fit the bill??? but im looking for 210 suji/petty, get in touch if you have something that fits the bill.
 
There are 210mm hh stainless sakai yusuke suji's on ebay as of right now.
