I am looking for a stone that I can take to work for quick touch ups or full on sharpening if someone else's knife is too dull. I am thinking around the 3k range. I am currently using a Naniwa Green brick for this purpose because of its ability to act like a 2k and a 4k stone. The problem with this is that I can't just leave it in my knife roll because it is huge.
I am thinking about a shapton 3k because it is thin, slow wearing, fast cutting, and splash and go. But if you can think of anything like that that I can use on single bevels too that would be awesome.
All recommendations welcome.
