Hi,
I found this forum a few weeks back when I started looking for some new kitchen knives... wow, so much information! Part of my daily reading now...

I lived in Japan for a couple of years and before I left I bought one Japanese knife - probably nothing special but it's a good reminder of having lived there (210mm single bevel - small yanagiba - wa handle).
I catch and cook mostly fish - up to 10 pounds - and other seafood.
I use waterstones for sharpening (bought for woodworking tools - planes/chisels etc) - mostly King (800 / 1200 / 6000 / 10,000).

Just about to make a 600mm magnetic knife bar from wood for the new kitchen and have decided to slowly buy a few new knives too.
