Anxious Cowboy took my #13 fore a spin last night (New Year's Eve). Number 13 was lucky enough to carve countless pounds of a A5 Wagyu by this talented chef and all around great guy.

Its good to see him again. Tell him he needs to come around more often. Great looking cheese steak. How was it?
 
Well he made it from the first cut off a 6oz steaks, so let's say that's about 80 oz of meat, so that's a $500.00 sandwich. How did it taste? We are talking about a chef who is known to make pig brains taste like a french kiss from god, sandwich was awesome.
 
Awesome. I want that sandwich. I've got #10 and it's still the gyuto that sets the standard and for other gyutos to measure up to.
