Up for sale is an HHH Production Gyuto, in AEB-L hardened to 61.5 HRC, #42. I used it for maybe 15 minutes of test cutting, and that’s it. Stropped once on hard felt, and I used some of Dave’s board wax on the handle soon after it arrived.

Beautiful, comfortable handle, nice profile and geometry, and it cuts really well. Selling to fund my DT ITK purchase.

Comes in original box, along with certificate of authenticity.

Price is $215, including paypal fees and USPS Priority shipping in the U.S.
