I am looking for an entry level 210mm stainless gyuto. It's for my boss who is an avid home cook but has not used a properly sharpened chef knife. I was thinking along the lines of Togiharu, Tojiro, or Fujiwara, but am open to any manufacture. The only criteria is the knife is in decent condition. So any of you have a starter knife in your kit or draw and want to get rid if it I could be interested.
