Blade Material: Hitachi White Carbon Steel
Hardness: HRC 62

Weight ==> lighter than Masamotot KS
The blade ==> thinner than Masamoto KS
Price ==> cheaper (half of Masamoto KS) but quality the same as KS ???


Anyone have used it before?
 
I've owned a 240 White #2 Masamoto KS, and have a Gesshin Ginga White #2 240 was gyuto. I've compared the two against each other. The Ginga is a superior performing knife - the grind is better and it cuts significantly better than the KS, the edge retention of the Ginga steel is better, and the fit and finish is much better (e.g., spine and choil rounded).

I would only recommend the KS if someone prefers the flatter profile of the KS, and a longer and blade heavy wa gyuto.
