Tosho-Knife-Arts and ZEN Sushi will be having a single bevel demonstration, Deba Yanagiba Usuba and Kiritsuke
Monday March 3rd at 6pm to 830pm
Chef Jackie Lin and Chef Takeshi Sato (for all you Iron Chef fans, Sato trained under the second Iron Chef Japan Koumei Nakamura) will be demonstrating both Japanese and western knife technique
Some things that will be covered
Fish butchery with Deba and yanagiba
Katsura-muki with Usuba
Classic Yanagiba and Kiritsuke technique
And showing the versatility and advantages to using single bevel knives in both western and Japanese cuisine
