Hey folks, nice place ya have here.
I'm just another person who loves to cook and likes to own nice cooking accessories.
I currently have a handful of individually purchased Henckels and also have a Shun Ken Onion. I also cut way too often on plastic cutting boards, which I assume has done a number on my knives over the years, and I have a shun electric knife sharpener and a chef's choice sharpener. Not sure if the electric sharpeners are able to be used on any knife, but I thought I read that the angle of bevel was different on the Shun... anyway.
I am looking to start the knife swap out process since I know there are better ones out there. I have also wanted to learn to sharpen by hand because I know that is superior to electric sharpeners. I have an older Norton combo stone 4k/8k i think that may be too fine for knives, so I'll be on the lookout for something a little coarser.
