The Suisin Inox Honyaki line is stainless steel(19C27)
240 is a bit on the large size, but it's all about personal preference and the size of the fish.
 
God damn, I'd love to pick this one up as well, I go back and forth most days on whether I'd want this or the 210 SIH deba as my go to fish knife. GLWS my friend
 
if i was in the market for a single bevel i'd be all over that. fantastic knife GLWS!

Gavination. Single bevel is good for slicing. For preparing I rather double bevel
