Up for sale is my Heiji 240 semi stainless gyuto. The knife has been used heavily in a pro kitchen and has been sharpened around 20 times. The price reflects this reality. It was kind of chunky behind the edge when I got it and it had some F&F issues that Jon Broida was more than willing to help me with but I just never sent the knife to him and kept using it. At this point it still needs some thinning on the left blade road to even out the edge and make it steer a touch less, as you can see in the photos. The only other issues are that the blade isn't quite mounted square into the chestnut octagonal handle but is twisted to the right, an issue it came with and there is a crack in the friction fit cedar says at the spine that makes it no longer friction fit. Other than that the price reflects the amount of use the blade has seen and the amount of work that it would take it even out the blade road and finish out some of the cosmetics from sharpening scratches.
I'm selling it because I bought a carbonext and a misono dragon suji and have realized that knives this nice are just too much upkeep in a pro kitchen, at least for me. And I want a misono dragon gyuto real bad after getting the suji, and I need some new spoons, benriner and on and on for a new job.
