Striper is great in Cioppino I use it a lot. In mine I like to use garlic, pepperoncino, fennel and leak in olive oil, deglaze with white wine, then add tomatoes (fire roasted when available), fish stock, striper, or cod, mahi, shrimp, clams, mussels, scallops (whatever), season to taste, garnish with what you like. I like hot sourdough with a seasoned butter on the side.
