Hello from Colorado. I have enjoyed reading the forum over the past several months. I initially got interested in Japanese knives after reading a cooks illustrated article a few years ago. I then read Chad Ward's book. I have enjoyed learning much more that I thought I would watching several videos suggested on the forum. I especially enjoyed the Youtube Awesome thread! I have also become a fan of Murray Carter and his videos as well. I enjoy cooking at home and find the experience is enhanced by using excellent equipment. Looking forward to future posts.
