We are developing knife holders and need to create a standard, for it we need to know which is the width of blade more commonly used by the users.

So... Please, we need to know the most commonly width of your Yanagiba, Gyuto, Deba and Petty knives.

We will be very been grateful by this help.

Hi there,

With "width" do you mean thickness or height (at the heel)? To give you an example: thickness of one of my gyutos would be 3mm, height 48mm...
 
Yes, I mean height at the heel. 48mm is a good example. Thanks!
 
You could spent half an hour browsing B/S/T section on this forum… there are enough knives with measurements to get you idea about most commonly sold knives here.
 
I've found that most commonly gyutos are 45mm to 53mm blade height. So... It's not a problem to up to 60mm.

Can be 60mm a correct standard measure for a gyuto holder?
 
Just about any gyuto, save a large or extra large Takeda is less than 60mm blade height.
