Knife Selection Question
I am trying to decide between these knives for a honesuki. Would anyone whom have had experience with these be able to chime in on them? These brands are whats available in the store that I am planning to purchase from.
Shun Blue Steel Honesuki (Clad Blue #2)
Kikuichi Ice Harden Utility/Boning (AUS-10)
Kasumi Utility (Clad VG-10)
Also while they don't seem to be the best value has anyone used a knife form the Chroma Haiku Kuroichi Tosa line?
In particular this nakiri
if you dont have some kind of coupon from that shop id say get something else.
