    Looks like I'll get probably be getting one. I'm too much of a sucker for thin knives. Too bad there's no nakiri or 180mm gyuto model. If they did a 180mm flat profile gyuto I'd be in heaven.

    I might be getting a 210 as well. Need to try one out.

    Might I add this question:
    Why do Konosuke clad their stainless knives with a stainless cladding? Is it just to protect the core against anything but rust? Or is this because the SLD is technically semi stainless (±1.6% carbon content) and might actually be susceptible to rust?

    Hi Erik
    Konosuke decided to put cladding on these knives in order to keep costs low. Having the blade made entirely of SLD would be more expensive. There is some debate as to weather this steel is completely stainless, However in our testing we can not get it to oxidize as all.

    Any idea how these compare in terms for performance to Yoshikane SLD models? I had Yoshi SLD (Suji) and still have SKD (petty) and have a lot of respect for these two steels. So it sounds very interesting that Kono now also offers knives in SLD steel.

    Matus. I have a 210mm gyuto on the way from Kono directly. If you have some patience I can give you a review around the third week of may (if it gets bere in time).
