I read good things here about edge retention of the Carbonexts, but I'm not so impressed with that of my honesuki; it seems on par with or slightly worse than my Tojiro DP gyuto.

I suspect I'm doing something wrong when sharpening. Have you found Carbonexts tricky to deburr?

Wire edge? Apply some pressure with your coarse stone to make sure you're pushing the debris over the edge instead of staying on the rounded edge. Any jig system involved perhaps?

Well, does your knife have a wirde edge? Check by running a fingertip along the edge, or a Q-Tip or a woolen thread. Or look if it glints if you hold it up to a powerful lamp or in the sunlight.
