So here is a set I just finished polishing.

Knife is a 270 mm, CPM 154, @HRC 61-62, mirror finished

Fork is a stock removal piece from 1/4" stock, again CPM 154 @ HRC 60

Tines on the fork are faceted on the outside, round inside, handle scales for both pieces cut from the same block of Marks Oregon maple burl, so a perfect match.

How hard was it to get that finish on this metal? Gorgeous set!
 
Sand papers from 120 to 1000, then polishing. Not easy, lots of elbow grease... I think its worth it for some pieces. This one will find its home in a higher end restaurant, to be used for carving at tableside.
