Hi everyone, I've been a long time lurker and i've learned a lot since my initial search for the edge-pro system. Never thought i would want to get involved with whetstones and hand sharpening, but here i am. I've been on other sites and the people on this one really seem to know their stuff. I recently purchased my first japanese knife--a miyabi kaizen. it wasn't my first choice by any means, but my wife didn't feel comfortable in buying something without handling it first. oh well(JKI will be my next destination). it's still much better than what i was using before. anyway, i appreciate this forum. i'm looking forward to learning more...
