    About the Brand

    The Mizuyama stone is Korin’s original line of sharpening stones that gained popularity over the years for its quality. The stone was developed by a natural sharpening stone specialist, Mr. Sugai and his grand master, Mr. Mizuyama, over 5 years ago. The Mizuyama stones are high quality tools that are made for and used by professional sharpeners. These stones absorb water to create a nice slurry of mud that makes the sharpening process easier and faster. Mr. Sugai and his apprentice uses these stones everyday to sharpen and repair knives as well as teach customers proper sharpening methods.

    Benefits of a #3000 Grit Stone
    • When sharpening knives, it is important to use medium stones and finishing stone. However, it is easier to use a #3,000 grit stone as a buffer in between, rather than jumping from a #1,000 grit stone to a #6,000 grit stone.
    • Cutting oily ingredients leads to shorter edge retention. According to Mr. Sugai, one of the uses of the honing steels is to help take the oil off knives. If you are planning to cut meat such as chicken, it is best to stop at the #3,000 grit stone. Although, the #6,000 grit stone will give you a more refined edge, it will also be more prone to dulling faster. Using a rougher edge will maintain the blade for longer. Korin considers it the best finishing stones for boning knives.

    So the back story on this stone fixer is that we were thinking about carrying it... But because we have another larger pink stone fixer that we like better, we decided to not carry it. As you can tell it's not damaged, it's just dirty from sitting around (especially during the renovation).

    I would have asked my wife to pick up the stone fixer if she was still in NYC but they left yesterday Anyway thanks for looking after her when she came in

    No problem, you wouldn't have known I would have taken it, my wife got some nice pics while she was where
