    Hi Mari,

    I've changed my mind. I don't want Mr. Sugai to sharpen my knives; I want Ms. Sugai.

    No gloves. The blade makers in Japan weren't wearing gloves either, so I think it's ok.

    Yes. He is moving on to traditional Japanese knives now too. He has been learning Western knives for 4 years now and focusing his energy there. He was excited Mr. Sugai told him he was ready.
