I bought a ichimonji kichikuni honyaki from Ferry and it was one of the best performing Gyutos I've tried, a really great combination of ease of cutting and food release, these look to have a similar geometry. Very tempting GLWS

Yes yes, they are great cutters as I have one 210mm in my possession. They have thick spines but thin behind the edge and have some heft to them.

Thanks for the kind words, buddy.

OT. Are you just up, or are you heading to bed? Probably the latter given that you are on the other side of the coast :).

I'm just up haha, doing breakfast shift at my workplace today. Way too early, mate!

Ferry, I think VonB has quite good taste in gyuto. (Lord knows, he's tried enough in his time too.) How are these two for sale compared to what Huw used?

The profile and grind are almost similar but there are still major differences.

Mainly, the spine is thinner, more common magnolia handle and lighter. The one that I am using is a great cutter, I like it better than my Yusuke Swedish stainless. Guess I am more into heavier knives.

The damascus looks better in real life, the pattern has more pop and nicer pattern than most other Japanese knife brands.

The Blue #2 get sharp and good retention, too.
