I saw this great video. It's all in Japanese, so I cannot understand who the bladesmith is, or what his brand is.

Does anyone know who he is, and by what brand his knives are sold?

The smith is Tatsuo Ikeda from Sakai. Here are a couple of links about him. love the way he nailed the temperature by eye as compared to the infra red camera in the video you posted.

many different brands use him and his nephew as blacksmiths
