This will be a beater, something that will be used around the kitchen in service without the need to wipe down constantly or worry when a co uses it. Something along lines of Suisin Inox, Gesshin Ginga, Kikuichi, Moritaka, Itonnomon etc. Pref wa handled but not a deal breaker.
 
You might consider a Hiromoto Gin-3, Misono 440, JCK Kagayaki Basic VG-1. The Hiromoto has the best steel, the Misono by far the best F&F and Kagayaki the best price. All with japanesechefsknife.com
For European customers it might be interesting to know that JCK has a flat shipping rate of $7 and is most helpful in avoiding HM most zealous customs.
 
Performance wise I would go in that price range for a Hiromoto Aogami Super 270mm gyuto, but if you allow a co-worker to use it, better have the softer Gin-3 instead, in order to limit the damage a bit.
