Hi all, haven't posted in a couple years :O busy with kids and all that...

Anyway, time for a new Gyuto!

I'm looking for one with fairly specific properties though:

-Less than $500 (the lower the better obviously)
-240 for length
-Has to be carbon. Not too picky on white vs blue vs V2 etc. as heat treat often seems to have more to do with edge retention than type.
-Clad. Looking for a very stiff knife. Preferably not stainless cladding as I'm a geek and prefer traditional materials and hey, I just like patina o.k.! Love a nice Kasumi finish!
-Wa handle please.
-Not a big fan of Kurouchi but some is nicer than others like Kochi.
-Prefer a flatter edge profile.
-Not a laser.

Main contenders right now are:

-Kochi Migaki. Not a lot of info out there on this one. Looks to have a sort of Kasumi finish and a pretty nice profile. Everyone raves about the geometry of the Kurouchi but it's not clear if the Migaki shares the same geometry.

-Gesshin Hide. White #2 looks nice and well priced as well. Could push the boat out for the blue #2 but the pics almost make it look like it has more belly? Can anybody speak to the geometry of these since the redesign? Is the blue #2 worth the money?

-Gesshin Ittetsu. Good looking profile but out of stock.

-Gengetsu. Great profile but stainless cladding and out of stock.

Can you folks think of any others that might fit my criteria?

I'll likely just give Jon a call tomorrow about the Hide's if I get a chance.
